FoodAI Group invited to GFI's Meat Biomimicry Research Summit at NC State University




Dr. Dachuan Zhang was invited as one of 20 global experts to participate in the Meat Biomimicry Research Summit, hosted by the Good Food Institute (GFI). The event will be held from November 5–7, 2025, at North Carolina State University in Raleigh, North Carolina, USA.

 

This small, invite-only meeting will bring together researchers from a range of disciplines, including food science, materials science, sensory science, and soft matter, to discuss key technical challenges and future opportunities related to meat biomimicry research. Over two days of structured discussions and collaborative activities, participants will explore topics such as flavor and aroma development, texturization, fat integration, and the broader framework needed to support progress in this emerging field. 

 

Dr. Zhang presented FoodAI Group's work in food informatics and the use of GenAI to simulate meat flavor with plant-based ingredients, and he looks forward to contributing to the conversations and learning from colleagues across different research areas.
